Preparation

Burger Sauce
Combine the cola, onion, garlic, vinegar, and chili pepper in a saucepan and simmer until reduced.
Add the curry paste and tomato paste to the reduced cola and simmer. Finely chop the ginger and lemongrass, add to the saucepan, and simmer. Add the finely chopped Kaffir lime leaves.
Add the soy sauce, ketchup, and tomato sauce.
Add salt and lime juice.
Allow to simmer gently.

Kaffir Lime Mayo Dressing
Blend all ingredients, gradually adding the oil to form an emulsion, then strain and season to taste.

Burger Buns
Mix all ingredients except the eggs and shape into 80-90-gram buns. Let them rise under a cloth for 30 minutes.
Brush with egg and bake at 200°C for 12-16 minutes.
Dip burger patties in butter for 2-3 minutes and lightly roast them on the grill.
