Ingredients

Burger Sauce
2 piece(s) lemongrass
50 g ginger
1 tsp. red curry paste
4 piece(s) Kaffir lime leaves
1 tbsp tomato paste
80 ml tomato paste
150 g ketchup
1 piece(s) onion
1 piece(s) chili pepper
50 ml vinegar
1 clove garlic
3 piece(s) limes, juiced
3 dl Coca-Cola
Kaffir Lime Mayo Dressing
100 g Greek yogurt
75 ml sushi vinegar
1 piece(s) lime, juiced
2 g fruity curry powder
5 g Tom Kha paste
10 piece(s) Kaffir lime leaves
50 g pasteurized egg whites
1 g xanthan gum
250 g Kaffir lime oil
500 g sunflower oil
5 g salt
5 packs Kaffir lime leaves
Burger buns
200 g water
30 g milk
40 g yeast
35 g sugar
5 g salt
80 g soft butter
500 g all-purpose flour (Type 550)
1 piece(s) egg
Burger patty
500 g beef (sirloin or flank)
100 g bacon
Grill Cheese / Cheese Slices
4 piece(s) «Der scharfe Maxx» Grill Cheese or «Der scharfe Maxx» slices

Preparation

  1. Burger Sauce

    Combine the cola, onion, garlic, vinegar, and chili pepper in a saucepan and simmer until reduced.

    Add the curry paste and tomato paste to the reduced cola and simmer. Finely chop the ginger and lemongrass, add to the saucepan, and simmer. Add the finely chopped Kaffir lime leaves.

    Add the soy sauce, ketchup, and tomato sauce.

    Add salt and lime juice.

    Allow to simmer gently.

  2. Kaffir Lime Mayo Dressing

    Blend all ingredients, gradually adding the oil to form an emulsion, then strain and season to taste.

  3. Burger Buns

    Mix all ingredients except the eggs and shape into 80-90-gram buns. Let them rise under a cloth for 30 minutes.

    Brush with egg and bake at 200°C for 12-16 minutes.

    Dip burger patties in butter for 2-3 minutes and lightly roast them on the grill.

  4. Burger Patty

    Grind all the ingredients together.

  5. Onions

    Finely chop the onions, salt them, and caramelize slowly in a bit of oil. Tip: Do this right at the start!

  6. Cheese

    «Der scharfe Maxx» Grill Cheese:
    Slowly sear the grill cheese on a griddle or frying pan until a nice crust forms. Just before finishing, transfer it to the grill.

    Once the patties are browned, set them aside and add the cheese on top, allowing it to heat slowly and melt without burning.
