Vegetarian Kebab with «Füürtüfel» Grill Cheese

1/2 bunch | dill, roughly chopped |

salt, pepper, lemon juice and zest |
Pickled Red Cabbage | |

1 head | red cabbage, finely sliced |
30 g | sugar |
200 ml | white wine vinegar |
300 ml | water |
15 g | salt |
10 g | mustard seeds |

Preparation

Pickled Red Cabbage (Prepare the day before)
Slice the cabbage into thin strips and place in a jar. Pour the hot marinade over the cabbage and seal the jar tightly. Let it marinate in the refrigerator for 1 day.

Pita Bread (Prepare 2-3 hours in advance)
Dissolve the yeast in lukewarm water. Add the remaining ingredients and knead into a firm dough. Cover with a cloth and let rise for 1 hour.
Shape the dough into a roll about 2 cm thick. Roll small balls from the dough, about 1 cm in diameter, and let them rise, covered, for another 10 minutes. Roll each ball into an oval disk using a rolling pin and sprinkle with sesame seeds. Place on a greased and floured baking sheet and bake in a 250°C oven for 8 to 10 minutes or until puffed.

Tzatziki
To make the tzatziki, peel and halve the cucumbers, then remove the seeds. Finely grate the cucumbers, sprinkle with some salt, and refrigerate for about 30 minutes to draw out the water. Strain the excess liquid through a sieve and discard or save the juice for another use. Combine the Greek yogurt with the cucumber. Add some lemon zest and juice. Press in the garlic to taste. Roughly chop the dill, flat-leaf parsley, and mint, then add to the bowl. Stir to combine and season with salt and pepper.

Grill Cheese
Cook the grill cheese on the grill (a grill mat is recommended) or in a skillet, searing both sides for about 3 minutes until you get a nice brown crust. You can substitute «Der scharfe Maxx» Grill Cheese for «Füürtüfel» Grill Cheese.

Stuffing the kebab
Slice open the pita bread and toast both sides until crispy. Remove the bread from the grill and fill each with 1-2 hot grill cheese coins. Add a generous serving of tzatziki and some pickled red cabbage to the grill cheese. Finally, season to taste with dried pepperoncini and garnish with mint.
Tip: Be sure to use real Greek yogurt, which is thicker and richer than regular yogurt!
